Time and again, guests highlight this dish in their reviews because they rarely find it prepared the traditional way at other Indian restaurants — and absolutely never elsewhere in the Bow Valley. It's naturally vegan, gluten-free-friendly, and full of bold flavour.
We refuse the shortcut of using pan-fried eggplant. Each batch is fire-roasted until the skin blisters, then peeled and hand-mashed by our chef so the smoky flavour permeates every bite of the finished dish.
